Experience is the true test of knowledge

I did not study Nutrition in school nor do I have any medical letters behind my name.  I do have a very keen interest in my, and my family’s health.  I think it started about 8 years ago.  I was what seemed to be a very healthy child,teen and in my mid 20’s is when the weight started to pack on.  I tried this diet and that diet, you name it, I was probably on it.  I did do well in the beginning, but they were never sustainable types of diet.  In my 30’s I kind of gave up on diets as I was going through Infertility treatments and finally after the birth of my second child I went on a very extreme caloric restriction diet.  I lost so much weight and kept it off for a couple of years.  I then started to have serious anxiety attacks, to the point that I was afraid to leave my house.  I looked healthy on the outside, but inside I felt anything but.  7 years ago I moved to the country with beautiful fresh air and decided it was time to get healthy.  I thought I would start with the basics air, water, food.  Well living in the country was the best I could do for air quality.  I had my drilled well tested, not only by the Health Department, but a private company that tests for all kinds of things found in water along with pH levels, minerals etc…  At the end of that test the guy said my water was so good I could sell it.  Then I started on my food.  I thought following Canada’s Food Guide and working out like a dog would do the trick.  Eating healthy *balanced* meals with lots of whole grains, protein, veggies, fruit, and eating out once in a while and joining a running clinic and cross country skiing 4 days/week should suffice.  Only every year I was bigger than the year before.  Suffering from Migraines, Acid Reflux, Heart Burn, Gall Bladder issues, upset stomach almost every night, IBS and all the lovelies that come with that!  I also suffered from PVC and this upset me the most.  When my heart would act up I would get really scared and anxiety would kick in big time.  I also had serious inflammation issues in my whole body.  I could stick my finger into my shin and it would literally leave a huge indent.  I just wasn’t feeling good and only 42 year old.  Frustrated and now depression kicking in I knew I had to do something but what?  That is when my mother phoned me and said she just heard a man being interviewed on CBC and it just made sense to her.  I ended up buying his book “Why We Get Fat – and what to do about it” by Gary Taubes.  I really got what the book was saying and thought “This is so me”  But to give up grains and sugar?  HA not likely!  Well a month later it was January 3rd 2012 and even though I vowed not to start another diet or get on the scale I caved and got on the scale and just about threw up on the floor.  I grabbed Gary’s book and said “OK Gary…lets do this!”  I went cold Turkey only eating foods that were less than 5 grams of Carbs per serving and less than 2 grams of sugar per serving.  Day 3 I got the Carb Flu and thought I was going to lose my mind.  I got through it and came out the other side and started to feel amazing!  I kept reading new books “Primal Blueprint” by Mark Sisson, “Primal Body Primal Mind” by Nora Gedgaudas, “Wheat Belly” by Dr. Davis.  Along with following several bloggers that were Primal or Paleo.  I have been collecting Primal/Paleo cookbooks and E-books and I am nearing the 1 year anniversary of this lifestyle.  45lbs gone, and all the ailments I listed GONE!  I started strength training and have more energy than I know what to do with.  I am asked all the time “What do you eat?” “What do you cook?” “What substitutes do you use?”  “Where do you find them?” and the list of questions go on and on.  So I decided to start this blog to post my journey, the recipes that worked and bumps and successes.  I am now totally grain, soy, sugar, legume free.  So I’m only posting my experience and knowledge of what worked for me.  You need to read, try and learn and that is what I do everyday.  🙂
