I follow Brittany Angell’s Blog http://realsustenance.com/ and she always has some amazing recipes. Here is one she posted yesterday and I had to try and I had amazing results, a bit different from hers.
2 cups blanched almond flour
1/2 cup Xyla
1 Tsp. Baking Powder
1/4 Tsp. Salt
3 Tbs room temperature Butter (I used Kerrygold Grass Fed Butter)
1 Tbs Vanilla Extract
2 Tbs Milk (dairy or nondairy)
1 Cup Enjoy Life Chocolate chips or chunks
1. Preheat oven to 350 degrees. Cover a large cookie sheet with either parchment paper or a baking mat to prevent sticking.
2. In the bowl of a stand mixer (by hand should work as well) combine all of the ingredients stirring in the chocolate last.
3. Spoon heaping TSP of dough onto cookie sheet
4. Bake roughly 18 minutes until the bottom and the edges start to look lightly golden brown.
