January 13th, 2013 and we woke up to just about all of the snow gone. WHA! We live in Muskoka…nuts!
Anyway the girls and I started our morning looking through the Practical Paleo book we have. I was actually reading them a section on POOP! Yep…poop…they were mostly grossed out, but like in normal Stark Fashion the giggles took over and I knew right there I had produced two well rounded Stark girls. Us Stark women do laugh about poo…but that will be another post.
This post is about being creative…so we were looking through the Paleo cookbook and our tummies started grumbling and we wanted food! So I said “Hey! Why don’t we create our own recipe?!” So we did. I am sure it has been done before somewhere on the planet. But here is what we did.
First we decided it would be an eggy casserole dish with BACON of course. I then thought of maybe sweet potatoes as well and then we add onion and tomato and CHEESE! The end result? Everyone LOVED it!
½ cup heavy cream
1 tsp salt, garlic powder, cumin, paprika and dash pepper
2 yams (sweet potatoes)
½ lb bacon
1 small onion
1 small tomato
2 cup cheddar cheese
(after we ate I thought salsa might have been nice too!)
Preheat oven to 350
-Dice yams and microwave on potato setting till done
-Cook bacon till desired crispness (crumble to desired size)
Mixed together yams, bacon, onion and tomato in frying pan.
In a large bowl beat eggs, cream and spices then add 1 cup of shredded cheese and the bacon mix.
Grease casserole dish with bacon fat and pour in the egg mixture
Cook for 30 min – add remaining cheese and cook till melted.
You can also put these into muffin cups for fast easy egg muffins on the go.
